Mexican Cornbread
1/2 lb. pork sausage
1 pkg Jiffy cornbread mix
1 egg
1/3 cup milk
1/2 cup cream style corn
5 tamed jalapeno rings chopped
3 green onions, chopped
8 oz pkg shredded cheddar cheese
Brown and drain sausage. In a large bowl blend next four ingredients. Add the sausage, jalapeno and green onions. Blend well. Fold in cheese. Spoon mixture into a greased 9x9 baking dish. Bake @ 350 for 40 minutes or until lightly browned. Let stand for 5 minutes before cutting. Top with Velveeta cheese dip.
Velveeta Cheese Dip
1 lb Velveeta.
1 small can Rotel diced tomatoes and green chiles.
Cube Velveeta, put in microwaveable bowl and add Rotel. Heat in microwave until melted, stirring every 3 minutes.

It's almost midnight here in California and I could go into the kitchen and fix this Mexican Cornbread right now. It looks delicious. Thanks for giving me a recipe for dinner tomorrow night. Have a great Easter weekend.

Thanks! I don't like ordinary cornbread, but I LOVE Mexican cornbread. However, I've always had to search for the (White Lily? Martha White?) mix. I'm delighted to know that I can make this with the ordinary Jiffy mix! At last, a recipe I might even cook!!!

Happy Easter! Love that cornbread. One Christmas my MIL added hot peppers by mistake. We all had a big surprise, but after the shock, we went ahead and ate the cornbread anyway because it was so good. Thanks for reminding me.

OH GOD. Yum. I vow I will make this recipe once I have lost too much weight and have to gain back a pound or two. Looks and sounds delicious. In fact... I believe I even smell the deliciousness all the way down in Florida.
