I Got Nothing... But Spaghetti Squash

I guess I am down to posting just once a week. Of course part of it is what time of year this is, always a busy season on the farm. That is a big part of it because between the goats, the garden, the farm in general and planning my sister's baby shower I just can't seem to keep my ducks in a row at all these days. That is not the only thing though, the truth is I am in a funk. I don't know how else to explain it, just a funk.

So for the blog lately I am afraid I got nothing; no that isn't true...I got spaghetti squash! I may end up with a lot more of that to harvest than I know what to do with. It is taking over the garden. It is spreading, creeping and climbing everywhere. It is out in the yard, climbing up the gate, crawling right over the tomato plants to try and choke the pepper plants to death. This plant really has boundary issues, but it is making up for it with lots of fruit. I have never ate spaghetti squash so I guess we will see how it is. Here is a picture of one of the fruits growing on the vine. If you are wondering why there is so much grass in my garden, that is because this particular vine has grown past the edge of the garden and out into the yard. Happy garden days!

Spaghetti squash is good, and there are a lot of tasty recipes for it.

You're right about this time of year, the work is never done...yet here I am, up late (early) blogging.

Hey, I wonder if there are any good baby shower food recipes that use spaghetti squash?

I can understand the busy days, so I'll just keep watching for the posts! Sounds like you'll be eating a lot of squash - but that's so much better than having to buy it!

I'm pretty sure goats will eat spaghetti squash with absolutely no preparation or added ingredients necessary. If not - chickens will take care of any leftovers. We have some cucumbers which are trying the invasion of the garden trick - very complex since we have an all containerized garden this year. Don't worry - I get in those blogging funks sometimes too - feels like I've already said whatever is going on with us - ten times! Always interested to hear another's daily life

I've tried spagetti squash a couple of times in the place of pasta, people claimed it was delicious, but Mike and I couldn't get used to it. However, I would like experimenting with some other recipes using it.

I get that way too. Don't worry, it passes. Some days I can't think of a thing to write and other days I'll get a head by a week.
My Mom and brother loved spaghetti squash. I've never gotten up the nerve to try it.
Mom said it tasted like spaghetti, only sweeter. Let us know. Maybe then I'll get up the nerve to try it myself.

I'm growing spaghetti squash too this year and like yours mine is everywhere. And like you, I've never had it. How do you know when they are ready to pick?

Go talk to your goats. Mine will pull me out of a funk quicker than anything.
Don't feel you have to write everyday or have something exciting to write about all the time. Life has it's funky moments. It's OK>

My spaghetti squash didn't come up this year. I don't know what the problem was with the seeds, didn't see so much as a start even. :( I like cooking up spaghetti squash and using it in place of regular spaghetti. One way to cook it is to cut off the stem and just stick it in the microwave for about 5 min. When cooked, carefully cut it in half and gently scrap out the seeds. The squash will come out of the peel like spaghetti. Eat it with your prefered sauce.

I am a huge spaghetti squash fan! You are a lucky girl. Just slice it down the middle, put it in an oven proof dish with an inch of water, cover with Seran Wrap and microwave several minutes (depending on the suze) until you can fluff it into "spaghetti". For medium size, add about 1/2 cup of cream (or half and half), 1-2 Tbps of butter, and 1/2 cup of grated parmesan cheese. Stir it all up, salt and petter to taste and yu ore good to EAT! You might need to pop it in the over for 10-15 minutes on 350 degrees to heat it all up if you take your time making it. I serve it as a side dish. Enjoy!
